Heavy metal
Mercury (Hg)
Wikipedia ↗Mercury is a naturally occurring metal that enters the environment from sources such as volcanic activity and past or present industrial use, and can be present in food. In water it can convert into methylmercury, which builds up in fish and shellfish; because higher exposures can harm the developing nervous system, the FDA and EPA advise people who are pregnant or breastfeeding and young children on choosing lower-mercury fish.

Daily-intake limits
- EFSA · inorganic mercury0.571 µg/kg bw/day(scaled by body weight)
This limit is for a specific mercury species, but the basic panel measures total mercury. Comparing total against a species limit is conservative; speciation testing is needed to confirm the species present.
- EFSA · methylmercury0.186 µg/kg bw/day(scaled by body weight)
This limit is for a specific mercury species, but the basic panel measures total mercury. Comparing total against a species limit is conservative; speciation testing is needed to confirm the species present.
See the Regulation Standards page for what each body measures.
